Aquarium's Revised Kitchen Dishes Sustainable Fare

The National Aquarium in Baltimore, MD is taking a sustainable approach to appeasing visitors’ appetites with the opening of Harbor Market Kitchen, a newly renovated dining facility.

The venue offers fresh, local fare that fits with the Aquarium's green business practices and conservation education mission.

This new dining area was designed to give guests both space to rest and a place to learn about earth-friendly food practices.

Operated by Sodexo Leisure, Harbor Market Kitchen’s menu serves up farm-to-table preparations. Dishes incorporate various sustainable and local products, ranging from seasonal produce and artisanal cheeses, to grass-fed beef and sustainably-harvested seafood.

Along with menu changes, dining renovations also included the installment of composting stations and the use of environmentally-friendly utensils and dishware. The venue is completed visually by a choice of seating at high stools or traditional tables, with a backdrop of ocean-themed colors.

The Harbor Market Kitchen and extension eateries throughout the Aquarium buildings are available during normal business hours.
