In the dog days of August, Las Vegas staples have released information on the newest dining options to hit The Strip.

Famed restaurantuer Tilman J. Fertitta has partnered with Eva Longoria as owner and manager of Beso, located in CityCenter. The restaurant has been embroiled in controversy since Longoria declared bankruptcy on the restaurant earlier this year. Fertitta is best known for turning around beleaguered chain restaurants like the Bubba Gump Shrimp Company.

World-renowned chef Michel Richard announced the specials he will serve upon opening his new restaurant at Caesars Palace, Central. Selections include a lobster burger, 72-hour short rib and whimsical "faux" gras.

For those who enjoy a New York Strip on the Las Vegas Strip, Old Homestead Steakhouse has been announced to open in 2012 replacing Neros in Caesars Palace.

"Old Homestead Steakhouse will be a dynamic addition to the superior selection of restaurants and celebrated chefs at Caesars Palace," said Gary Selesner, president of Caesars Palace. "This premier location adjacent to the Nobu Hotel, Restaurant and Lounge planned to open in 2012, will become the new epicenter of the resort, offering our guests a fresh and contemporary experience."
