Azure Restaurant Opens at the Royal Hawaiian

The Royal Hawaiian has opened Azure, a new Waikiki beachfront restaurant. Azure occupies the former site of the Surf Room and specializes in fresh island seafood while featuring locally caught fish. The restaurant’s candle-lit interior features mother-of-pearl mosaic walls and plush banquettes and pillows.

Azure will serve up cuisine by award-winning Chef de Cuisine Jon Matsubara. Matsubara attends the Honolulu Fish Auction at Pier 38 each morning to purchase the catch of the day directly from the source. Chef Matsubara has worked in kitchens from New York to Honolulu, including Restaurant Jean Georges in New York, Alan Wong’s Restaurant in Honolulu and, most recently, Stage Restaurant in Honolulu where he was awarded the 2007 Ilima “Critics Choice” Award for “Best New Restaurant.”
