Casa Dorada Los Cabos Resort & Spa, a Preferred Hotel destination located on Medano Beach in Cabo San Lucas, Mexico, announced the appointment of new executive chef, Carlos Bonilla Souberbielle, who will helm the culinary program at the resort.
Bonilla comes to Casa Dorada from one of the premier hotels in the Los Cabos area, The One & Only Palmilla. Over the past two years, he oversaw the daily kitchen operations for dinner service of the resort’s Five-Star restaurant, including banquet operations.
Prior to arriving in the Los Cabos area, Bonilla worked in some of the best restaurants in the Detroit Metropolitan area, including the Atlas Global Bistro, a restaurant he co-owned and was honored with “Four Forks” from the Detroit Free Press. He also received multiple mentions in Hour Magazine for his inventive cooking. As executive chef of Agave Restaurant, he received praise for the “Most Innovative Mexican restaurant in Detroit” in the annual publication of Gourmet Magazine´s “Top 50 Tables in the US”.
During his college years, Bonilla participated in the Junior Hot Food Championship series, sanctioned by the American Culinary Federation. He and his four-person team won the gold medal at the National Level.
Bonilla is a graduate of Schoolcraft Colleges’ culinary program and also has a Bachelor of Science Degree from Eastern Michigan University. Currently, he writes a bilingual blog and has published his first cookbook, “Cuisine Bohème,” which illustrates his personal style of cooking.
