Ultimo Weekend in Las Vegas to Offer Foodie Travel Experiences

The Venetian and The Palazzo Las Vegas will be hosting the fourth-annual, Ultimo – A Weekend of Excellence with a theme of “Le Grand Voyage” in Las Vegas later this year from December 9-11.

The weekend will include feasts and experiences from a lineup of chefs and wineries from around the world. The weekend events will be spread around The Venetian, The Palazzo and across the Las Vegas valley.

Throughout the weekend, guests will be given the opportunity to partake in several experiences, including a Rolls-Royce driving experience, a hot-air balloon ride with a Dom Perignon picnic at Red Rock Canyon National Recreation Area and a Louis Vuitton fashion experience in the Grand Canal Shoppes.

A portion of the proceeds will be given to ment’or BKB Foundation, which is a non-profit organization devoted to inspiring culinary excellence in young professionals and preserving the traditions and quality of cuisine in America.

The Grand Banquet

The Grand Banquet is a highlight of the event and hosted in the Grand Colonade at the Venetian.  The meal is a collaboration between some of the world’s best chefs, including Chefs Thomas Keller, Jérôme Bocuse, Emma Bengtsson, Curtis Stone, Ming Tsai, Vikram Vij, Pierre Thiam, Paul Bartolotta and Shaun Hergatt. The table will feature pieces from Lalique and several wineries will be providing pairings, including Dom Perignon, DAOU Vineyards, Marqués de Murrieta, Memento Mori, and Pio Cesare.

To coincide with the theme of “Le Grande Voyage” the meal will have an international menu as each chef will cook meals inspired by their country of origin. Leading the dinner will be Chef Thomas Keller of Bouchon (Yountville, Las Vegas), Per Se (New York City), and French Laundry (Yountville).  Additional chefs will include:

  • FranceJérôme Bocuse, son of legendary French chef Paul Bocuse and a member of the Paul Bocuse restaurant group
  • AustraliaCurtis Stone of Maude (Beverly Hills)  and Gwen (Hollywood)
  • Australia:  Shaun Hergatt, formerly of Juni (New York City)
  • Asia:  Ming Tsai of Blue Ginger and Blue Dragon (Boston)
  • India:  Vikram Vij of Vij’s (Vancouver, B.C., Canada)
  • Africa:  Pierre Thiam of Pierre Thiam Catering, formerly of Le Grand-Dakar (New York City)
  • Italy:  Paul Bartolotta of The Bartolotta Restaurants Group (Milwaukee)
  • SwedenEmma Bengtsson of Aquavit (New York City)

The Winemakers

The Grand Banquet will include wine from the finest wineries around the world. These wines will be delivered in person by the winemakers who make them and include:

  • Pio Cesare, who will bring his decadent single-vineyard Pio Cesare Il Bricco Barbaresco 2004.
  • Vicente Dalmau Cebrián-Sagarriga, Count of Creixell, will come from Spain with his Marqués de Murrieta Castillo Ygay Blanco Gran Reserva Especial 1986.
  • Brothers Daniel and Georges Daou will debut their Daou Vineyards Cabernet Sauvignon Patrimony, which will be uncorked and poured for the first time for guests at the Grand Banquet.
  • Hayes Drumwright, Adriel Lares, and Adam Craun will deliver Memento Mori, a Cabernet Sauvignon from Napa Valley.  
  • An ambassador of Dom Pérignon will pour several vintage varieties of the Champagne. Both Dom Perignon Vintage 2006 and Dom Pérignon Rosé Vintage 2004, will be served at the Grand Banquet. Dom Pérignon P2 Vintage 1998, the Second Plenitude of Dom Pérignon, will be shared at a surprise moment during the weekend’s events.
