The Westin Resort & Spa, Los Cabos introduced Mirko Cappa as the resort’s new Executive Chef. Cappa, who joined the resort in August 2007, is responsible for overseeing the production, promotions, management and overall efficiency of all food and beverage departments and facilities.
As Executive Chef, Cappa leads a brigade of 55 professional chefs, 12 kitchen trainees, four sous chefs and a team of 29 stewards. Cappa creates and implements menus and oversees food preparation, presentation and service at all four Westin restaurants: Arrecifes, the resort’s fine dining establishment; La Playa, a light outdoors restaurant with views of the Sea of Cortez; La Cascada, a flexible restaurant that changes from fun midday fare to nightly buffet; and El Set, a full-time buffet with great views and elaborate menus.
