Wynn Las Vegas to Debut Viva Las Vegan May 9

Vegas Uncork'dThis spring, Sin City is going vegan when Wynn Las Vegas launches Viva Las Vegan, a vegan cooking and tasting event, as part of Vegas Uncork'd by Bon Appetit magazine, co-hosted by vegan chef and author Tal Ronnen, alongside chefs from Wynn Las Vegas and Encore. Beginning at 12 p.m. on May 7 in Encore's Beethoven suite, guests can sample an array of vegan creations by award-winning chefs from a selection of the city's fine dining establishments, as part of the hotel's collaboration with Ronnen to develop new vegan menus for the restaurants.

Culinary aficianados will be familiar with the work of Alex Stratta of Stratta, Jet Tila of Wazuzu, Kim Canteenwalla of Society Café, Mark LoRusso of Botero as well as David Walzog of Lakeside Grill and SW Steakhouse. Each of the chefs will demonstrate how to cook their vegan dish, with their preparations projected onto a large screen so that guests can follow along using the ingredients provided at their stations.

Following the event, your clients will be able to take home recipes of the chefs' specialities. We hear Walzog's vegan "clam" chowder with cashew cream base and smoked oyster mushrooms is divine, as is Tila's jade dumplings with spinach and shiitake mushrooms. Culminating the event will be organic cocktails from Patricia Richards, award-winning mixologist of Wynn and Encore, alongside vegan desserts from distinguished  pastry chefs Kimberly Valdez and Jenifer Fournier of Wynn.
