Cornerstone Collection to Open Hotel Cacao

Cornerstone, the team behind of San Miguel de Allende’s Hotel Matilda are taking their concept to a national level with the Cornerstone Collection. This development will see a number of Hotel Matilda-themed boutique hotels spring up around the country. Starting off this development will be Playa Del Carmen's Hotel Cacao, which will open its doors this coming September, followed by a Mexico City property in 2015.

Hotel Cacao will be located on 5th avenue and comprise of sixty rooms which will feature a "hippie-chic" style. The rooms are to come with bathroom amenities by Italian designer Missoni and will also feature artworks donated by Tommy Hilfiger. There will be a central court with a hyacinth lily pond designed by architect Rodrigo de la Peña. Enrique Olvera, operator of Hotel Matilda’s eatery Moxi, will be taking his first “coctelería” (mixology) experience to the hotel’s rooftop bar which will provide sweeping views of the Caribbean and Cozumel Island.

The hotel's restaurant Nibs, will be headed by Olvera’s protégé, Chef Alejandro Cuatepotzo. Recipes will reinterpret popular Mexican seafood and meat dishes whilst tapping indigenous ingredients of the region. Guests can expect to dine on dishes such as ceviches with coconut and lime, lobster with green mango, salt-baked red snapper and prime flat-iron carne asada. Nibs will feature a tropical decor complete with a jungle mural and a flowing waterwall.

Night owls will enjoy the after-hour-style downstairs bar that will encompass a bordello look. The shops and restaurants on the street level of the building include Maíz de Mar and a marisquería (seafood restaurant) by Chef Olvera.

Rates will range from $196 to $500, including Continental breakfast. Taxes are additional.
