The new Knickerbocker Hotel in Times Square has announced the official opening of three dining venues in partnership with Charlie Palmer.

Charlie Palmer at The Knick, the hotel's full-service restaurant and bar, and JAKE’s @ The Knick, the hotel’s ground-level espresso bar, are now open. St. Cloud, the property's rooftop bar and terrace, is set to open this spring.

Located on the fourth floor of The Knickerbocker, the hotel’s signature restaurant, Charlie Palmer at The Knick, was designed by New York City-based Gabellini Sheppard with subtle romantic touches and textures like chainmail drapes, a Carrara marble bar top and finishes, and an open action kitchen. The restaurant serves breakfast and lunch in the dining room and dinner in the adjacent bar room, with menus inspired by Palmer’s progressive American cooking style. Additionally, the fourth floor is home to The Salon, the hotel’s private event space that accommodates up to 250 guests.

Lunch is seasonally driven with locally sourced items, while dinner offers menu items including Scotch Quail Eggs with Pop Corn Shoots, Dijon, and Pancetta Aioli; Grilled Romaine Hearts with Garlic Breadcrumbs, Shaved Pecorino, and Honey-Lemon Emulsion; and The Knick Burger, a dry-aged custom blend patty topped with short ribs and Irish Cheddar served on a brioche bun made by Aureole baker, Peter Edris. The lunch and dinner menus designed by Chef Palmer and The Knickerbocker’s Executive Chef Cliff Denny will also offer The Knick Test Kitchen, a daily special menu featuring two to three variety meat offerings that will include dishes such as Veal Head Cheese and Flash Seared Sweetbreads.

Operating as the second portal entry to the hotel, JAKE’s @ The Knick honors John Jacob ‘Jakey’ Astor VI, the son of John Jacob Astor IV, who originally opened The Knickerbocker in 1906. JAKE’s @ The Knick offers an all-day menu, with coffee and espresso provided by Brooklyn Roasting Company and artisanal flatbreads from Sullivan Street Bakery.

Opening this spring, the hotel's rooftop bar, St. Cloud, will serve a seasonal menu of small plates paired with a progressive cocktail program. The space will also have a signature cigar lounge from tobacconist Nat Sherman, and the Waterford Crystal Lounge - a space with custom furniture from British designer Jo Sampson, as well as Waterford bar and stemware.
