All-inclusive, AAA Three-Diamond Coconut Bay Beach Resort & Spa on St. Lucia recently added two new restaurants and upgraded its spa, just in time for the summer travel season.
Calabash, the resort’s new Caribbean specialty restaurant, showcases regional cuisinesuch as fish and sweet potato cakes with pineapple salsa and jerk chicken drumsticks with warm callaloo salad. The resort's second new restaurant, Capri, offers an array of Italian and seafood menu items such as pumpkin ravioli and prosciutto-wrapped snapper.
In addition to the recent dining upgrades, guests can also head to the newly renovated Kai Mer Spa. The refurbished waterfront spa now offers three new beachfront spa cabanas and a relaxation patio.
