Eden Rock – St Barths recently announced the appointment of Executive Chef Anne Cécile Degenne, who will work at the hotel’s two dining venues: On The Rocks and The Sand Bar.
Prior to her appointment, Degenne spent six years at Eden Rock as the chef de cuisine under Jeane-Claude Dufour. Under this title, she assisted in managing the two on-property restaurants and oversaw the staff of 20 cooks and three pastry chefs.
Before relocating to St Barths, Degenne held tenures as a line cook at one-star Michelin restaurant Campagne et Gourmandise Biarritz France and a cook assistant at Restaurant Le Chateau de Brindos, Relais et Châteaux. She received formal culinary training at Iguane Bordeaux in France.
Degenne is passionate about travel and seeks discovery and ideas in cuisine from around the world. She uses these culinary inspirations for the flavors and spices in dishes on the new menus, categorizing items into four themes: “Discovery,” “Healthy Eating,” “Tastes of the World” and “French Classics.”
