Colibri Boutique Hotels has announced a new collaboration with Copenhagen restaurant noma.
The noma “pop-up” will take up residency next to the Colibri hotel La Zebra in Tulum on the Mexican Riviera. Guests can enjoy noma Mexico from April 12, 2017 through May 28, 2017. René Redzepi will reunite with former sous-chef Rosio Sanchéz to develop a new and original menu consisting of local and indigenous ingredients.
The noma Mexico team, Redzepi and Sanchéz included, have begun development on the concept already, traveling the country and looking for inspiration. Noma Mexico will be located outdoors between the Caribbean Sea and the canopy of the jungle, outside the hotel.
Noma Mexico follows the success of noma Tokyo and noma Sydney.
Colibri Boutique Hotels consists of five properties, and was recently inducted into the Small Luxury Hotels collection. La Zebra is a fun and casual all-suite resort. Noma Mexico at La Zebra joins the popular pop-up bar from New York City’s artisanal Mulberry Project, launched this month, and the Chef’s Table by Eleazar Bonilla.
