Palmaïa – The House of AïA Appoints New Executive Chef

Palmaïa – The House of AïA, a holistic wellness retreat in Riviera Maya, Mexico, has appointed Carlos Carrion Garcia, a pioneer in plant-based food, as its executive chef.

Popularly known as “Chef Charly,” he is known for his deep layers of flavor with textures most people would think are impossible to achieve with plants. He founded Charly’s Vegan Tacos in Tulum, Mexico and Wynwood, Miami. The restaurant offered tacos by recreating the textures and flavors of meat with plants. Owing to the pandemic, Charly’s Vegan Tacos was shut in 2021, which also coincided with the executive chef opening at Palmaïa.

“Welcoming Chef Charly to our team will strengthen our commitment to our ‘Progressive Wellness’ concept, therefore contributing to more healing by offering guests the opportunity to learn about healthy food through a unique experience that is not forced but let’s everyone discover new ways of living in their own time and space,” said Alex Ferri, Palmaia’s founder and CEO.

Following his graduation from L’École des Chefs, he spent the first 15 years working at several steakhouses in Mexico City until he reached the position of executive chef. At Palmaïa, Chef Charly will run all four dining venues and will enjoy a culinary playground of plant-based food as this provides him with ample opportunities for innovation.
